Lactoferrin Digestion Patterns and Bioactive Peptide Release in the Elderly: A Gastroenterology Study
Investigators at Tianjin University of Science and Technology have conducted a study to characterize the digestive behaviors of lactoferrin (LF) produced by freeze-drying (F-LF) and spray-drying (S-LF) methods in the elderly gastrointestinal (GI) environment. The researchers used an in vitro dynamic digestion system (DHSI-IV) to simulate GI conditions and found that S-LF was more thoroughly hydrolyzed than F-LF. The study also identified six peptides with good bioactivity, toxicity, solubility, and stability, which were selected for molecular docking with acetylcholinesterase (AChE). The results provide a theoretical basis for understanding LF digestion and the release of bioactive peptides in the elderly.
